This one is for those who really want to test their culinary skills. But don't be intimidated by the image or the description. This meal is more about it's prep time than anything else. So find a good day when you can get really stuck into this easy to make and delicious meal.
Mix all of the meatball ingredients except the mozzarella and the oil in a bowl.Use your hands to mix it all together but don’t over-mix as this will make the meatballs tough.
Take a heaped tablespoon of the mixture in your hands, roll it into a ball, then flatten into a pattie.
Place a chunk of mozzarella in the middle and wrap the meat around. Roll into a ball and place on a tray, then repeat with the rest of the mix.
Heat the oil in a large skillet. Fry the meat balls on high heat, turning a few times during cooking until browned all over.
To make the sauce, add the onions on the same pan, turn down the heat and cook for about 5 minutes, until they are soft. Add the garlic and cook for a further minute, then add the cans of tomatoes, tomato paste, sugar, oregano, salt and pepper. Let it bubble for 10 minutes and turn off the heat.
